With all this hot weather we've been having, it's nice to have a cool treat at the end of a long walk with Whiskey. Rather than buying something that as just glorified frozen sugar water, I wanted to try and make something that was a little healthier with lots of flavour.
Using some berries, greek yogurt and honey that I already had, I put together these super delicious Blackberry-Lemon Greek Yogurt Popsicles. Not only did they hit the spot, but they were also ridiculously easy to make. I'm looking forward to experimenting with even more flavour combinations this summer.
I love the little bits of blackberry and even a little lemon zest from the yogurt.
What you'll need:
1 cup Blackberries
1 cup Lemon Greek Yogurt
1-2 tsp Raw Honey
Makes 6 small popsicles. Double the recipe to make more.
You can do any flavour combination that you want, using this measurements. I chose the Krema Lemon Greek Yogurt after we fell in love with the coconut version at the Green Living Show and Garrett's favourite berries are blackberries, so I knew those had to go in.
Using a mojito muddler, I mashed up the blackberries in a bowl. You could also do this with a fork or even a potato masher.
In a medium sized bowl, I mixed the berries into the yogurt and added some honey to make it a little bit sweeter. Taste the mixture and see if you want to had more.
For popsicle molds, I used one of these sets from IKEA. They were about $2 each, are the perfect size for a little treat and let you take one popsicle at a time as needed. To remove the frozen popsicles, I just run an individual holder under a little hot water and they pop out.
